Must-have mustard

Maille Dijon Originale

The sharp spiciness of a good dijon mustard can do wondrous things for marinades, homemade salad dressings, and any other dish that calls for mustard. Maille has been making mustard in Dijon, France, since 1747, and exports one of the best and most reasonably priced examples available in the US. Add a tablespoon to a jar of apricot preserves for a delicious pork-roast glaze, or a teaspoon to a vinegar-and-oil salad dressing in need of something piquant. And, athough this may scandalize the French, it's also great on hot dogs. A 30.5-ounce jar sells for $3.99 at Marty's Liquors in Allston.
