Capers, the tiny flower buds of a bush native to parts of Asia and the
Mediterranean, have been consumed for so long that they are mentioned in the
epic of Gilgamesh, one of the oldest known recorded legends. The buds are
picked, sun-dried, and then pickled in vinegar. Their sharp pungency can
enhance many basic cream or broth sauces for fish, poultry, or meat. Roland
capers are imported from Spain and are particularly tangy. A 90-milliliter
bottle retails for $2.69 at most area supermarkets.
