Traditional mayonnaise is an emulsion of vegetable oil, egg yolks, and vinegar
or lemon juice, occasionally with added seasonings. Mayoli, a twist on
America's favorite sandwich spread (and France's favorite sauce for fries), is
made with olive oil instead of vegetable oil. This gives it a rich, earthy,
olivey taste, making it perfect for a sandwich of tomatoes, basil, and fresh
mozzarella -- or, for that matter, most other sandwiches. A 16-ounce jar costs
about $2.50 at most area supermarkets, including Star Market.
