If ever you needed proof that foodstuffs take flavor from the land that produced them, pour yourself a glass of Chambertin wine with L'Ami du Chambertin, an oozy and indulgent raw-milk cheese from the same region of France. Both the Burgundian wine and the cheese have barnyard aromas and bold, earthy flavors. L'Ami du Chambertin is one of many Époisses-style cheeses, which are Burgundy's most reputed and sought-after lactose creations, only recently made available in the United States. So celebrate! A nine-ounce wheel costs between $13 and $15 where fine cheeses are sold, including Bread & Circus supermarkets and Formaggio Kitchen, in Cambridge.
