Artichokes, step aside: you've got competition. A tuber of the sunflower, the
"sunflower choke" grows like a carrot (underground) and has a sharp, nutty
flavor. It can be sliced and sautéed with herbs, eaten raw, baked with a
roast, or chopped up and added to stir-fries. This versatile vegetable is a
welcome change from the same old meat and you-know-what. A pound of Melissa's
sunflower chokes costs $2.79 at most area supermarkets, including Star
Market.
